Cheddar Cheeses

  • The 15 Year Old Aged Cheddar is pasteurized cheese that is made in small batches in 40 pound blocks. This cheese undergoes a grading process as it matures, to ensure that it has the right specifications for continuance of aging. Our cheddar develops richer and more complex flavors over time and this cheddar has reached the pinnacle of those flavors. The result is an extremely rich and full-bodied nutty flavor, with an extremely sharp and slightly tangy bite at the end. The texture of the cheese is granular and crumbly, with hard salt-like crystals called calcium lactate that are very pronounced, giving the cheese a slight crunch. Despite its 15 year age, the cheese still ends with a smooth and creamy finish.
