Description
Aged Brick is an American original and is among the first washed rind cheeses produced in the U.S. It was developed in 1877 by John Jossi, a Swiss born cheesemaker. As Jossi did-Joe Widmer uses real brick to press his cheese, the same bricks his grandfather used in 1922. After pressing, the cheese is placed in a salt brine for 8-9 hours, then moved to a warm humid curing room where it is washed and turned daily for 7 days. It is then packed in parchment paper and foil where it reaches peak flavor at 3-5 months. Some individuals also prefer to consume this cheese when it is milder around 2 months and it is entirely dependent upon palate and personal preferences. This semi-soft cheese has a pleasant, earthy flavor which intensifies with age. Widmer’s Aged Brick is also available with caraway seeds.

I wish I could get good cheese here in the Midwest (Kansas City KN). But I can’t. They only have Colby, Cheddar, Swiss , Blue and combinations of the above. I look forward to ordering this cheese when the temps get low outside.

I have it shipped to Florida. It is not as strong as aged Limburger but I eat it the same way as I do Limburger. Put it on Rye with mustard and onion – delicious and much less expensive. Widmer’s Whole aged Brick is very high quality. I will order again.

Smoothest, creamiest brick cheese to be found anywhere. It is worth the drive to buy this at the factory or have it shipped. I ship this to a friend who grew up in Wisconsin but has lived in other states for many years. She cannot find good brick cheese and is delighted to receive this treat at Christmas.

Having lived in Lomira for all except the last 15 years Widmers brick cheese was a staple at our house. Living in La Crosse now it is difficult to find but being able to order it right from the factory and have it shipped and arrive here in just 3 days was wonderful. Haven’t had this brick cheese since I was a kid at grandma’s house in Burnett, WI and it’s just like I remembered. I have found other brick cheeses here and there but this one is the best! As I can’t find any locally were I live now I figured I may as well order the best. I tried some on my hamburger and that is how I’ll be eating them from now on at home.

I usually drive 50 miles round trip from Illinois to Woodman’s Market in Kenosha or Mars Cheese castle to get Widmer’s aged brick. Ordering a 5 lb brick online has been a revelation. The Wisconsin stores have been out of stock on occasion leading to much frustration.

I wish I had found Widmer’s cheese years ago!! The service is without peer. After I had placed my on-line order I got a call from staff suggesting that if I didn’t need the cheese right away she would tag her calendar and send it when Wisc. and Oregon weather were cooler. She also helped me by explaining the cheese I ordered vs. a less strong variety. I felt that this is a company that really cares about it’s customers. My cheese arrived 4 days ago in perfect shape, in a cooler with ice packs which were totally melted. If the cheese had been sent earlier it would have had a different outcome.
