Nice bite, complex flavor. Not a rat cheese.
I thought it might be too much, but for me I like it, I just can’t eat as much at one sitting as the 6 year. My wife thought it was too sharp and preferred 6 year. I like your cheese so much I don’t use crackers, I just eat it in thin little slices or crumbles.
My father has been on an aged cheese trying spree. He is always looking for aged cheddar so I got this and a few other cheeses from Widmer for his birthday.
