I have always bought Widmer’s Brick in the store. But, I cannot find it any more. So I went on line directly and also bought the Widmer’s Jalapeno Brick Cheese. Both are excellent.!! A Winner In My Book.!!!

My husband’s father used to make home made pizza when we are growing up. We moved to FL from Pennsylvania and was never able to find it. Now we buy it faithfully and my husband makes the same delicious pizza. Thank you all for everything, including the memories. God bless~

My late mother made her Italian rice Torta’s with Brick cheese which was readily available in our grocery stores in upstate NY when I was growing up in the 50’s and 60’s. For years now I have been searching for Brick cheese in NY and VT where I now live, but to no avail. I found this cheese online and was a bit hesitant as it is orange and our Brick cheese was always white. I purchased this cheese and it arrived quickly and packed perfectly in a cooler. The cheese worked perfectly in Mom’s recipe. It is a very creamy, mild cheese..very pleasant!

My Brother-in law brought some of this wonderful cheese down to Illinois when he came to visit for Christmas and we were hooked. I have since reordered and plan to again. Only problem I have is once I slice it-it disappears way too fast.

I moved away from Wisconsin some 30 odd years ago. I have not had brick cheese since moving away. Recently visited Wisconsin for a few days and got to try some of your cheese while I was there. I’m very happy with the cheese. As a former Wisconsinite, it was always a favorite and I cannot get out west. I was a bit disappointed in the delivery however. I paid a lot for shipping in a refrigerated container, however, it arrived warm. There wasn’t one bit of “cool or cold” in the Styrofoam container and the ice packages were warm liquid.
Glad you liked the cheese Barbara, however in the warm weather you will see that you should send the cheese other than ground but I am glad it made it safely and if possible it is always good to stock up before the warm weather comes. Thank you!

Usually I order pizza to be shipped by Detroit Style Pizza Company to south Florida. I asked Shawn, the owner, what cheese they use – brick cheese. This last time I ordered my 12 pizzas from Buddy’s – the originator of Detroit style pizza, wanting to try something different. Their pizza is very bland compared to Shawn’s – no cheese flavor. I tried ordering a small brick of Brick Cheese from Widmer’s to see if I could duplicate the flavor of really good Detroit pizza. Sprinkled the grated brick on top of the Buddy’s pizza – heated it up @ 450 F. Melted and started to caramelize properly in the steel auto parts pan that is used to cook Detroit pizza. The brick cheese helped tremendously and the flavor is there. I’ll be re-ordering.

The Brick is our favorite cheese from Widmers. by far though the Colby is a close second. The flavor and tetture of the Brick makes us want to eat a whole pound pack at one sitting. OUTSTANDING!
